		<description>&lt;p&gt;I&#039;m a mighty omelet cooker myself. But I have disdain for the dry omelet. I subscribe to the &quot;no flip&quot; camp. Fold with the top slightly under done. The remaining heat will cook the egg the rest of the way. If you don&#039;t want the inside moist and fluffy, why make an omelet to begin with? If you want it all cooked thoroughly, just make the frittata.&lt;/p&gt;
