But I have disdain for the dry omelet. I subscribe to the "no flip" camp. Fold with the top slightly under done. The remaining heat will cook the egg the rest of the way. If you don't want the inside moist and fluffy, why make an omelet to begin with? If you want it all cooked thoroughly, just make the frittata.</p> I’m a mighty omelet cooker myself.
